I like to fish. I like to EAT fish too. A little rice pilaf with an ear of corn and I feel like I’ve died and gone to Heaven! Here are a few of my favorites.
EASY TARTAR SAUCE
½ cup mayonnaise
½ teaspoon horse radish
3 teaspoons pickle relish
Mix all ingredients together and enjoy.
I must not have a very developed palate. I’ve substituted Miracle Whip and can’t tell much difference!
Unfortunately, most of my cooking involves frying. Here’s the one recipe I use for BAKED FISH:

GRILLED SHARK STEAKS
Shark steaks have a different texture than most fish—not as flaky as other fish but not like beef. If you think you don’t like fish, they may be for you.
½ cup soy sauce
¼ cup catsup
2 Tbls lemon juice
2 minced cloves of garlic
½ cup of orange juice
¼ cup chopped parsley
Pinch of pepper
Shark steaks—(6)
Mix up all the ingredients except the shark meat and then pour the mixture over the meat and marinate for 3 hours. After marinating, grill the steaks about 6 minutes or until it flakes with a fork. Baste with the remaining marinate while grilling.Shark steaks have a different texture than most fish—not as flaky as other fish but not like beef. QUICK FRIED FISH
This is for most fish that you may catch or just about anything you find at the supermarket. If you use fish from the store, make sure they’ve thawed.
Heat your pan with a medium heat.
Always make sure your skillet is coated with oil or butter. Even with non-stick cookware I use cooking spray.
Cook the fish on both sides 1-3 minutes. 1:45-2:15 seems to always work on my stove.This is for most fish that you may catch or just about anything you find at the supermarket. If you use fish from the store, make sure they’ve thawed.

GOOD FRYING COATING
2 cups pancake mix
3 Tbls seasoning salt
2-3 large eggs
Mix pancake mix and seasoning salt in bowl and have another bowl for the eggs. Beat eggs and coat fish with the eggs before swiping it through the mix. Then, place the fish in hot oil—around 375 degrees. Fry the fish 2-4 minutes.2 cups pancake mix

Rinse 4 fishfillets
Lay fillets on a rack in shallow pan,
coat each fillet with mayonnaise, and then
sprinkle with a little lemon pepper
Crumble approx. 20 saltine crackers in bowl,
and spread cracker crumbs to cover mayonnaise
Bake around 20 min. at 400 degrees
The cracker top will brown and make things look like you’re a real chef!

I don't like shark though...it tastes (strangely) *gamey* to me...
Great recipes -- another one to try, Asian marinade for 2 reasonable-size pieces:
1-2 tablespoon(s) light soy, depending on your taste-buds
1 tablespoon rice wine (optional)
2 teaspoons sesame oil
Sprinkle of seasoning salt pepper or crushed chilli
Dash of parsley or coriander
Grated ginger (as u like, optional)
Marinade for at least an hour, then either steam by adding 3 tablespoons of water to the plate or pan-fry in canola oil.
