This clip is a guitarfish which can be found in tropical waters and grow up to around 10 feet in length and weigh over 500 lbs. (3 meters/225 kg.)

Odd as it may seem, I actually know something about this. It would depend on the exact species but shrimp are a pretty safe bet. Most of them are caught in nets.

It MUST be the underside. I know they're related to rays and the like so I'd say it is, I know I'm going to be paying more attention the next time I go to the aquarium!
